While the burger’s origins are unknown, it has a great reputation among bleu cheese aficionados. That being said, it is a somewhat unique burger that anyone can make and enjoy.

Black and Blue Burger Recipe

Our black and blue burger recipe serves 4 and can be prepared in under an hour. You’ll need the mentioned ingredients to prepare the stuffed burger patties, sauce, blackened spice mix, and garlic butter buns.

Blackened Spice Mix:

  • 1 tablespoon freshly ground black peppers
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1 teaspoon granulated garlic
  • 2 teaspoons granulated onion
  • 1 teaspoon paprika
  • 1 teaspoon cayenne
  • 1/2 teaspoon chili powder
  • 1 teaspoon Italian seasoning

Use a small mixing bowl to mix the peppers, cumin, salt, granulated garlic and onion, paprika, cayenne, chili powder, and Italian seasoning. Make sure to mix thoroughly for an even blend and store it in an airtight container if you plan to use it later.

Sauce:

  • 1 cup mayonnaise
  • 1/4 teaspoon salt
  • 1 teaspoon yellow mustard
  • 1/4 cup minced roasted garlic
  • 4 pinches of freshly ground black pepper
  • 4 dashes of Worcestershire sauce

Mix the mayonnaise, salt, yellow mustard, roasted garlic minced, ground black pepper, and Worcestershire sauce in a small mixing bowl and cover the bowl for later use.

Burger:

  • 2 pounds of ground chuck (80/20 blend works best)
  • 10  ounces of premium bleu cheese
  • 8 slices of crispy smoked bacon
  • 1/2 finely sliced sweet onion (Walla Walla, Vidalia, or Maui)
  • 1 finely sliced heirloom tomato
  • 1 finely sliced dill pickle
  • 1/4 finely sliced iceberg lettuce
  • 1/4 cup vegetable or canola oil

Preparation

Make 8 portions of the ground beef and gently roll them into loose balls. Flatten the balls into 4-inch patties and place 2 ounces of bleu cheese on 4 of the 8 patties. Then, use the remaining patties to cover your cheese patties, and use your hands to seal the edges for four complete stuffed patties gently.

They should be around 1.5-inches thick. Season the stuffed patties generously on both sides with your blackened spice mix. Pre-heat your grill to a medium-high temperature and place the stuffed patties on the grill.

To avoid flare-ups while grilling, make sure to space them evenly and at least a few inches apart. Grill on one side for about 3 minutes, just enough to form a crust. Then flip the stuffed patties and grill for 2 minutes to form a crust on the other side.

Top each stuffed patty with two slices of crispy smoked bacon and even portions of the leftover bleu cheese. Cover the grill with some foil and let the patties cook for another 30 seconds to allow the cheese to melt. Finally, remove the patties from the grill and set them aside to rest for 3-4 minutes.

Garlic Butter Buns:

  • 4 fresh brioche buns (cut in half)
  • 1/2 stick unsalted butter
  • 6 minced garlic cloves
  • 3 tablespoons minced fresh parsley

Preparation

Put a saucepan over medium heat and add the butter and garlic. Let it cook for around 5-6 minutes, till the butter has melted and you can smell the garlic. Pour it into a small bowl before adding the fresh parsley and set aside.

Cut the fresh brioche buns in half, lightly brush the insides with your garlic butter, and put them on the grill to toast. Continue for around 10 seconds until the insides are golden and crisp.

Assembly

Start by smearing your sauce on four bottom buns, then add a layer of sliced lettuce and sliced tomatoes to each. Place your stuffed patties on the tomatoes and top with pickles and onion before covering with sauce-smeared bun tops.
