- Pinch of Salt and Pepper
Coating the Chicken
- Plain Flour: 1 Cup
- Corn Starch: ½ Cup
- Paprika: 1 Teaspoon
- Black Pepper: 1 Teaspoon
- Pinch of Salt
- Milk: ⅓ Cup
- Egg: 1
Spicy Mayo Sauce
- Mayonnaise: ½ Cup
- Sweet Chili Sauce: ¼ Cup
- Honey: 2 Teaspoons
- Chili Puree: 2 Teaspoons
Burger Ingredients
- Brioche Buns: 2
- Pickled Cucumber: 2 (Sliced)
- Iceberg Lettuce Leaves: 4
- Cheese Slices (Your Preference): 2
Instructions
Marinate the Chicken
- Mix salt, pepper,mustard, vinegar, and chili and garlic puree in a bowl
- Butterfly the chicken and coat it in the marinade
- Cover and set aside for 2 hours
Make the Spicy Mayo Sauce
- Mix honey, chili sauce,and mayonnaise in a bowl
- Keep adding a little bit more of the chili sauce until the mayo reaches your desired spiciness
Coat the Chicken
- In a bowl, mix pepper, paprika,and cornflour
- In a second ball, crack two eggs and add milk. Whisk the mixture
- Cut your butterfly chicken into four pieces
- Cover both sides of the chicken piece with the flour mix
- Dip the piece in the egg mix and then coat them again with the flour mix
Cook the Chicken
- Deep fry the chicken in oil at 180°C, giving each side 4 minutes.
Assemble Your Burger
- Place your brioche buns on a pallet and add a dollop of your spicy mayo tothe bottom
- Spread the sauce evenly and then lay down the lettuce
- Place your crispy fried chicken on top and add more lettuce
- Top with pickles, cheese,and more sauce
- Place the top bun and give it a little brush of butter

- Carrot: 1 (Grated)
- Fresh Coriander: 1 Tablespoon (Chopped)
- Red Onion: ½ (Finely Sliced)
- Low-Fat Greek Yogurt: 3 Tablespoons
- Dijon Mustard: 1 Teaspoon
Instructions
Prep the Meat
- Cover the chicken breast with cling film and pound it with a mallet
- Cut the chicken intotwo pieces and place it in a bowl with Cajun seasoning, garlic, olive oil, and crushed chili
- Wear disposable gloves and rub the spices into the chicken
- Marinate for 10 minutes
Make the Coleslaw
- In a bowl, combine red onion, coriander, carrot, mustard,and Greek yogurt
- Mix well and set it aside
Assemble the Burger
- In a frying pan, place the chicken piece and cook for 4 minutes on each side
- Place the chicken on a rack and let it cool slightly
